Almond Butter Espresso Bites
I have been making these little bites for years and have yet to grow tired of them.. they are so addictive (too additive) and a sure crowd pleaser!
It all stemmed from my love of the smell of coffee and yummy coffee treats! I am not a huge coffee lover or drinker, but coffee in ice cream or coffee cake?? you have me sold.
So, if you would like to make the best and easiest recipe of all time : here you go!
1 cup creamy almond butter
1 cup oats (I use quick oats but have used regular and they work just as well)
1/3 - 1/2 cup honey (depending on how sweet you like it. I like to use 1/3 cup but use 1/2 when making it for others!)
1/2 cup sliced almonds
1 tbsp pure Madagascar vanilla extract
1/3-1/2 cup dark chocolate chunks or chips (depends on how much chocolate you like!)
1.5 tbsp coffee grinds or espresso grinds.
optional : add 2 scoops Vital Proteins Collagen Peptides. You can also add a pinch of sea salt if you prefer!
Mix all ingredients in a big bowl - I personally love hand mixing the ingredients. It keeps the almonds and oats in tact and I like the texture! But, placing them in the foods processor is a great option as well if you like a smoother texture.
After mixing, refrigerate for at least 20 minutes before rolling into little bites! This just makes it easier to roll up!
Then just pinch off a little at a time to form into balls and keep refrigerated! The longer the bites sit, the better! Day 4 - 5 is our favorite! The coffee flavor is killer by then!
